Hi there! Welcome to A Pastry Lush. I’m Annaliese, and pastry is my passion! I’m creating this space to celebrate all things pastry, baked goods and confections. When it comes to dessert or a sweet treat, count me in.

I’m a Wisconsin native, lover of prairies and rolling countrysides, and a pastry lush. I was inaugurated into the food system at a young age, growing up next to a family dairy farm, and I play a role in our food system today still – both as a consumer and a food scientist. I have my B.S. and M.S degrees in food science from UW-Madison, so naturally, functionality of ingredients and recipe development is a personal and professional passion. My day job is creating ready-to-drink coffee beverages (think of those canned beverages with that green mermaid on them, for example), but in my free time, I love to explore new recipes and try new ingredients.

As with many who love baking and pastry, classic French recipes and techniques are ones that I am most drawn to, with classic American baking coming in second. Italian pastries and cooking are on my list, too. I also have a fondness for crunchy-granola-type baking and treats, as well as using alternate flours. My husband is a native Brazilian – so elements of the colorful cuisine of Brazil also make it into my baking. Variety is the spice of life, so I aim for that!

In my free-time, besides baking, you’ll likely find me reading, fermenting something, sipping on coffee, exploring new food stores and markets, running, attempting to learn Portuguese, or going on hikes with my main squeeze.
